If your eggs are not yet cooked: place eggs in a saucepan, cover with cold water by 1 inch, bring to a gentle boil, then lower heat and simmer 9–12 minutes. Transfer to an ice bath for 5 minutes, peel, and dry.
Coarsely grate or finely chop the peeled eggs and put them in a medium mixing bowl. Grating gives a lighter, fluffier texture; chopping yields more curds.
In a separate small bowl, mash the avocado with the lemon juice until mostly smooth (a few small chunks are fine). Stir in the Dijon mustard and smoked paprika until combined.
Fold the avocado mixture into the chopped eggs along with the chopped pickle and scallion. Gently combine until coated — avoid over-mixing to keep some egg texture.
Season with salt and black pepper, taste, and adjust lemon or salt as needed. For a firmer salad, refrigerate covered for 10–15 minutes to let the flavors meld and the avocado chill slightly.
Spoon the salad onto lettuce leaves, toast, or crackers, and sprinkle with the chopped parsley or dill before serving.
