Pour 2 tablespoons of the white chocolate sauce into a small heatproof cup. Add about 1 tablespoon of the cold milk and microwave or warm briefly until the sauce thins and is pourable (about 10–15 seconds). Stir until smooth to make a slick white chocolate syrup.
Pull a single shot of espresso (about 1.25 oz). While it’s hot, stir the espresso into the warmed white chocolate syrup until evenly combined.
Fill a 12-oz glass halfway with ice. Add the vanilla extract to the remaining cold milk and give it a quick swirl or 5-second whisk to incorporate.
Pour the espresso + white chocolate mixture over the ice, then gently pour the milk over the back of a spoon onto the espresso to create a layered look. Stir once to marry the flavors, or leave layered for presentation and stir at the table.
Taste and add the remaining 1/2 tablespoon white chocolate sauce if you prefer it sweeter. Finish with a sprinkle of white chocolate shavings on top and serve immediately.
Notes
For a creamier texture, use whole milk or exchange 2 tablespoons of milk for half-and-half. To make ahead: mix the white chocolate syrup with espresso and refrigerate up to 24 hours; assemble with cold milk and ice when ready.This recipe is an original creation inspired by classic Creamy Iced White Chocolate Mocha flavors.
