Pour 1/2 cup of the almond milk into a medium bowl. Add the vanilla protein powder and whisk briskly until smooth and lump-free; creating a thin slurry helps prevent clumps later.
Stir the remaining 1 1/2 cups almond milk into the protein slurry, then whisk in maple syrup, ground cinnamon, and the pinch of salt until evenly distributed.
Add the chia seeds to the bowl and fold them in with a spoon so they’re fully moistened. Press the mixture down so the seeds aren’t floating on top.
Let the mixture rest at room temperature for 8–10 minutes, then give it a vigorous stir to break up any early clumps. This quick second stir helps the pudding set more evenly.
Cover the bowl and refrigerate for at least 4 hours, or overnight for the creamiest texture. The chia seeds will swell and thicken the mixture into a spoonable pudding.
After chilling, stir the pudding once more to loosen it. Divide into 4 servings and top each with mixed berries and a sprinkle of toasted almonds before serving.
If the pudding is too thick after chilling, thin it with a splash of almond milk and stir until you reach the desired consistency.
