Creamy Protein Overnight Oats

Thick, creamy overnight oats boosted with protein powder and chia for a filling, make-ahead breakfast. Ready straight from the fridge and easy to customize with fruit or nuts.

Ingredients

Overnight oats base

  • 1 cup old-fashioned rolled oats
  • 1 cup 2% milk (or unsweetened plant milk)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup vanilla whey or plant protein powder
  • 2 tbsp chia seeds
  • 1 1/2 tbsp pure maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon adds warm depth
  • 1/8 tsp fine sea salt

Suggested toppings (optional)

  • 1 small banana, sliced
  • 1/4 cup mixed berries or chopped fruit
  • 2 tbsp chopped nuts (almonds, walnuts)
  • 1 tsp extra maple syrup or nut butter, for drizzling

Instructions

Preparation Steps

  • In a medium mixing bowl, whisk together the milk, Greek yogurt, protein powder, maple syrup, vanilla extract, ground cinnamon, and salt until smooth and no lumps of powder remain.
  • Stir the rolled oats and chia seeds into the wet mixture until fully combined. Let the mixture sit for 1–2 minutes and then stir again to evenly distribute the chia so it starts to absorb liquid.
  • Portion the oat mixture into two 12-oz jars or containers, cover tightly, and refrigerate for at least 6 hours or overnight. The oats will thicken as the chia absorbs moisture.
  • When ready to eat, open a jar and stir vigorously to loosen the texture. If the oats are too thick for your liking, add a splash (1–2 tbsp) of milk and stir to reach the desired creaminess.
  • Top with sliced banana, berries, chopped nuts, and an extra drizzle of maple or nut butter if using. For a warm option, microwave the jar (remove metal lid) for 30–45 seconds before adding toppings.

Notes

Make up to 4 jars at once and store in the fridge for up to 4 days; stir before eating and add a splash of milk if it firms up. For extra creaminess, swap half the milk for coconut milk or use whole milk.
