Pat the wings thoroughly dry with paper towels; removing surface moisture is key for crisp skin. Place wings into a large bowl or zip-top bag.
Combine the baking powder, kosher salt, black pepper, lemon pepper seasoning, garlic powder and smoked paprika in a small bowl. Sprinkle the dry mixture over the wings, add the olive oil, and toss well to coat every piece evenly.
Let the coated wings rest uncovered in the refrigerator for 10 minutes if you have time (this firms the skin). If short on time, proceed directly to cooking.
Preheat the air fryer to 400°F. Arrange the wings in a single layer in the basket with a little space between pieces so air can circulate—work in two batches if necessary.
Air fry at 400°F for 12 minutes, then flip each wing and continue at 400°F for another 8 minutes. Reduce the temperature to 375°F and cook an additional 6–8 minutes until the skin is deeply golden and crisp and the internal temperature reaches 165°F.
While the second batch finishes (or as wings rest briefly), whisk the melted butter, lemon juice and lemon zest together in a small bowl.
Transfer hot wings to a large bowl, pour the lemon-butter mixture over them, and toss gently to coat. Sprinkle with chopped parsley for color and an extra pinch of lemon pepper if you like it punchy.
Serve immediately for peak crispness. If holding briefly, keep wings in a warm oven (250°F) on a rack so steam doesn’t soften the skin.
