Easy Banh Mi Meatball Bowls

A fast, weeknight-friendly bowl that captures the bright, savory flavors of a classic banh mi — spiced pork meatballs, quick-pickled carrots & daikon, fluffy jasmine rice, crunchy cucumber, fresh herbs, and a spicy-sour mayo drizzle.

Ingredients

Meatballs

  • 1 1/4 lb ground pork
  • 1 large egg
  • 1/3 cup panko breadcrumbs
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce (low sodium preferred)
  • 2 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp finely chopped scallions (white + green parts)
  • 1/2 tsp kosher salt

Quick Pickles

  • 2 cup matchstick carrots and daikon (about 1 cup each)
  • 3/4 cup rice vinegar
  • 3 tbsp granulated sugar
  • 1 tsp salt

Rice & Toppings

  • 2 cup uncooked jasmine rice
  • 1 small English cucumber, thinly sliced
  • 1 small jalapeño, thinly sliced (optional)
  • 1/2 cup fresh cilantro leaves, roughly chopped
  • 2 tbsp chopped scallion greens (for garnish)
  • 1 tbsp toasted sesame seeds
  • 2 wedge lime (cut into wedges for serving)

Sriracha Mayo & Finishing Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha (adjust to heat preference)
  • 1 tbsp fresh lime juice
  • 2 tbsp fish sauce (for a finishing drizzle)
  • 1 tsp lime zest (small complementary ingredient)

Instructions

Preparation Steps

  • Start the quick pickles: combine rice vinegar, sugar, and salt in a bowl; stir until dissolved. Add the matchstick carrots and daikon, press them down so the liquid covers the vegetables, and let sit at room temperature while you finish other prep (about 15–20 minutes).
  • Cook the rice: rinse jasmine rice under cold water until the water runs clear. Combine with 3 cups water in a medium saucepan, bring to a boil, then reduce heat to low, cover, and simmer 15 minutes. Remove from heat and keep covered for 5 minutes before fluffing with a fork.
  • Make the meatball mixture: in a large bowl, gently whisk the egg, fish sauce, soy sauce, grated ginger, and minced garlic. Add the ground pork, panko, chopped scallions, and salt. Use your hands to fold everything together until just combined — avoid overworking so meatballs stay tender.
  • Shape and rest: form the mixture into 16–18 uniform meatballs (about 1 1/4 to 1 1/2 inches each). Place them on a tray and let sit 8–10 minutes; this resting helps the crumbs absorb moisture and keeps the meatballs from falling apart when cooking.
  • Cook the meatballs: preheat the oven to 400°F. Heat a tablespoon of neutral oil in a large oven-safe skillet over medium-high heat. Brown the meatballs in batches, turning to get a golden crust, about 6 minutes total. Transfer the skillet to the oven and roast 10–12 minutes until an instant-read thermometer reaches 160°F. For extra crispness, broil 1–2 minutes at the end, watching closely.
  • While meatballs finish, mix the sriracha mayo: whisk together mayonnaise, Sriracha, lime juice and lime zest until smooth. Also drain the pickled vegetables and give them a quick toss — most of the pickling liquid can be reserved for another use or discarded.
  • Assemble bowls: spoon warm jasmine rice into bowls, top with 4–5 meatballs each, a generous handful of pickled carrots & daikon, cucumber slices, cilantro, jalapeño if using, and a drizzle of sriracha mayo. Finish with a small drizzle of fish sauce (optional), a sprinkle of toasted sesame seeds and chopped scallion greens. Serve with lime wedges.
  • Store leftovers in separate airtight containers — meatballs and rice fridge-stable for 3–4 days; keep pickles and sauce separately for best texture.

Notes

Tip: For a lighter bowl, swap half the mayo for Greek yogurt in the sriracha sauce. Make-ahead: pickles can be prepared a day ahead and kept refrigerated.
