For a smoother crust texture, pulse the cottage cheese in a food processor or blender 6–8 quick times until mostly smooth but not totally liquid. If you like a slightly rustic texture, skip this step.
In a medium bowl whisk the eggs with the olive oil until combined. Fold in the processed cottage cheese, flour, onion powder, garlic powder, and dried oregano until a thick, spreadable batter forms.
Spoon the mixture onto the prepared sheet and use the back of a spatula to spread into a roughly 9-inch circle, about 1/4–1/3 inch thick. Leave a tiny raised rim around the edge so toppings don’t spill.
Bake the plain crust on the middle rack for 18–22 minutes, or until the top is set and edges are lightly golden. Remove from oven and let rest 3 minutes – this helps the crust firm up for topping.
Spread the pizza sauce over the warm crust, sprinkle the shredded cheese evenly, scatter the turkey pepperoni, and dust with the Parmesan if using.
Return the pizza to the oven and bake another 5–7 minutes until the cheese is fully melted. For a touch of char, move to the broiler for 1–2 minutes watching closely.
Let the pizza rest 2–3 minutes after baking. Slice into two servings and enjoy warm.
