Ingredients

Pudding Base

  • 2 1/2 cup unsweetened almond milk (or milk of choice)
  • 1/2 cup vanilla whey protein powder
  • 1/2 cup plain Greek yogurt
  • 1/2 cup chia seeds
  • 2 tbsp pure maple syrup (or honey)
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp fine sea salt

Toppings

  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tbsp chopped almonds or granola

Instructions

Preparation Steps

  • Measure 1/2 cup of the almond milk into a small bowl or large measuring cup. Add the vanilla protein powder and whisk vigorously until smooth and lump-free to create a protein slurry.
  • Pour the remaining 2 cups almond milk into a medium bowl. Stir in the Greek yogurt, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt until evenly combined.
  • Add the protein slurry to the milk-yogurt mixture and whisk thoroughly. Once homogeneous, sprinkle in the chia seeds and fold them in with a rubber spatula so they distribute evenly.
  • Let the mixture sit at room temperature for 10 minutes, then stir vigorously or whisk again to break up any early clumps. This helps the seeds hydrate uniformly.
  • Divide the pudding among four 8-oz jars or bowls, cover, and refrigerate for at least 4 hours (or overnight) until fully set. For faster results, chill in the coldest part of your fridge and give each jar a quick stir after 30 minutes.
  • Before serving, top each portion with equal amounts of mixed berries and a sprinkle of chopped almonds or granola for crunch. If the pudding is too thick, stir in 1–2 tablespoons of milk to loosen.

Notes

Tip: Make a double batch and store portions in jars for grab-and-go breakfasts — they keep well for 4–5 days in the fridge. For a silkier texture, give the pudding a quick high-speed blender pulse before chilling.
