Prepare the lettuce: separate leaves, rinse and dry thoroughly. If you want them more flexible, wrap in a damp paper towel and microwave for 10 seconds.
Make the crema: in a small bowl whisk together the Greek yogurt, 1 tablespoon lime juice and a pinch of salt. Refrigerate until assembly.
Heat a large nonstick skillet over medium-high heat. Add the olive oil and once shimmering, stir in the chopped onion. Cook, stirring occasionally, until softened and translucent, about 3–4 minutes.
Add the minced garlic, smoked paprika and taco seasoning to the onion and cook 30 seconds until fragrant. Push the aromatics to the side of the pan.
Crumble the ground turkey into the skillet and use a spatula to break it into bite-sized pieces. Cook, stirring frequently, until no longer pink, about 6–8 minutes total.
Pour in 1/4 cup water and scrape the bottom of the pan to loosen browned bits. Reduce heat to medium and simmer 1–2 minutes so the flavors meld and the mixture thickens slightly.
Remove from heat and stir in lime zest, 1 tablespoon lime juice and chopped cilantro. Taste and adjust salt and pepper as needed. Let the filling rest for 2–3 minutes to settle.
Assemble the wraps: spoon 2–3 tablespoons of turkey into the center of each lettuce leaf, then top with diced tomato, a few avocado slices, shredded cheddar, and a drizzle of lime crema.
Garnish with extra cilantro and serve with lime wedges on the side. Leftover turkey keeps in an airtight container for up to 3 days—reheat gently and assemble fresh.
