Trim, core and thinly slice the apple into bite-sized pieces. Place the slices in a medium bowl and toss immediately with the lemon zest to brighten flavor and slow browning.
In a separate small bowl, whisk together the Greek yogurt, peanut butter, honey and ground cinnamon until smooth and uniform. Taste and adjust honey or cinnamon if you prefer sweeter or spicier.
Pour the yogurt-peanut butter mixture over the lemon-dressed apple slices. Use a spatula to gently fold everything together so the apple pieces are evenly coated but still retain their crunch.
Spoon the salad into a serving bowl or jar, then sprinkle the granola on top for texture. Press the granola lightly so it adheres to the yogurt if you like a combined bite.
