Homemade Muesli Breakfast Mix

A crunchy, lightly toasted muesli blend made from rolled oats, mixed nuts and seeds, coconut, warm spice and chewy dried fruit—easy to mix, toast and store for quick breakfasts.

Ingredients

Muesli Mix

  • 2 1/2 cups old-fashioned rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup pecan halves, roughly chopped
  • 1/3 cup raw pumpkin seeds (pepitas)
  • 1/4 cup raw sunflower seeds
  • 1/2 cup unsweetened coconut flakes
  • 1 cup mixed dried fruit (raisins, cranberries, or chopped apricots)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt (optional)
  • 2 Tablespoons ground flaxseed replaces chia (optional)
  • 1/2 teaspoon ground cardamom small warm spice addition

Instructions

Preparation Steps

  • Preheat oven to 325°F. Line a large rimmed baking sheet with parchment paper or a silicone mat and set aside.
  • In a large bowl combine the oats, cinnamon, cardamom and sea salt. Add the sliced almonds, half the chopped pecans, pumpkin seeds and sunflower seeds; toss thoroughly so the spices coat the dry ingredients.
  • Spread the mixture in an even layer on the prepared sheet. Toast in the oven for 12 minutes, then remove and use a spatula to turn the mix so the edges brown evenly.
  • Scatter the coconut flakes and the remaining pecans over the partially toasted mix and return to the oven for another 5 minutes, watching closely until the coconut and nuts are lightly golden and the oats smell toasty.
  • Allow the sheet to cool on a rack for 20–25 minutes—this lets the muesli crisp up. Transfer the cooled mixture back to the bowl, stir in the dried fruit and ground flaxseed, and mix to combine.
  • Store the muesli in an airtight container at room temperature for up to 3 months. Serve with milk or yogurt, or spoon over fruit for a quick breakfast.

Notes

Tip: For crunchier clusters, press the oat mixture lightly after the first 12 minutes in the oven before adding the coconut. Serve with chilled yogurt and a drizzle of honey for contrast.
