Ingredients

Base

  • 2 cup cottage cheese (2% or your preference)

  • 2 tbsp scallions, thinly sliced

Seasoning & Crunch

  • 1 tbsp extra-virgin olive oil
  • 1 tsp everything bagel seasoning (or 3/4 tsp sea salt + 1/4 tsp black pepper)
  • 1/2 tsp smoked paprika
  • 2 tbsp toasted sunflower seeds (or chopped pistachios)

Optional Protein

  • 2 large eggs (one per bowl) optional, for topping

Instructions

Preparation Steps

  • Stir the cottage cheese with the lemon juice and zest in a medium bowl until slightly smooth but still creamy; this brightens the flavor and gives a loose base for the toppings.
  • Combine the halved cherry tomatoes and diced cucumber in a small bowl; toss with half the olive oil and a pinch of salt to macerate briefly while you prepare the other elements (about 2 minutes).
  • Heat a small dry skillet over medium heat and toast the sunflower seeds, stirring, until they are fragrant and just starting to brown, about 2–3 minutes. Transfer to a small dish to cool.
  • If using eggs, warm 1 teaspoon of olive oil in the skillet over medium. Crack eggs into the pan and cook to your preference—sunny-side up with a slightly runny yolk works best here (about 2–3 minutes). Season the eggs with a pinch of salt and pepper and remove from the pan.
  • Assemble: divide the lemoned cottage cheese between two bowls. Spoon the tomato-cucumber mix to one side, arrange avocado slices on another, and scatter scallions and dill over the top.
  • Drizzle the remaining olive oil over the bowls, sprinkle smoked paprika and everything bagel seasoning, then finish with toasted seeds for crunch. Top each bowl with an egg if using.
  • Allow the bowls to sit 1 minute so flavors settle, then break the yolk into the cottage cheese when ready to eat and stir slightly for a creamy texture contrast.
