Southwestern Black Bean Salad

A bright, chunky Southwestern salad that layers black beans, charred corn and fresh vegetables with a zesty lime-cumin dressing—ready in under 30 minutes and great for meal prep or BBQ sides.

Ingredients

Salad

  • 3 cup cooked black beans (about 2 15-oz cans), drained and rinsed
  • 2 cup corn kernels (fresh or frozen, thawed)
  • 1 1/4 cup red bell pepper, finely diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 each jalapeño, seeded and minced (optional for heat)
  • 1 each ripe avocado, diced

Dressing

  • 3 tbsp fresh lime juice (about 2 limes)
  • 3 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika adds a subtle smoky note
  • 1 tsp honey (or agave)
  • 3/4 tsp kosher salt, or to taste
  • 1/2 tsp freshly ground black pepper

Instructions

Preparation Steps

  • If using fresh corn, cut kernels from the cobs. Heat a dry skillet over medium-high heat. Add the corn in a single layer and cook, stirring occasionally, until charred in spots, about 5–7 minutes. Transfer to a bowl and let cool slightly.
  • While the corn cooks, place the lime juice, olive oil, cumin, smoked paprika, honey, salt and pepper in a small jar or bowl. Whisk or shake vigorously until the dressing is emulsified and smooth.
  • In a large mixing bowl combine the drained black beans, charred corn, diced red pepper, cherry tomatoes, red onion and chopped cilantro. Add the minced jalapeño if you want extra heat.
  • Pour about two-thirds of the dressing over the salad and toss gently to coat. Taste and add more dressing or salt as needed. Let the salad sit at room temperature for 10 minutes to allow flavors to meld, or refrigerate for up to 30 minutes for a chilled version.
  • Fold in the diced avocado just before serving to preserve its texture and color. Garnish with a little extra cilantro and an optional lime wedge.
  • Serve the salad as a side for grilled meats, spoon it over greens for a hearty lunch, or scoop it with tortilla chips as a chunky dip.

Notes

Make ahead: mix the salad (without avocado) and dressing up to 24 hours in advance; add avocado just before serving. If you prefer a smokier flavor, swap smoked paprika for a pinch of chipotle powder.
