Start the rice: rinse the rice under cold water until the water runs mostly clear. Combine rice with 2 3/4 cups water and a pinch of salt in a medium saucepan, bring to a boil, reduce to low, cover and simmer 18–20 minutes until tender. Remove from heat and let sit covered while you finish the bowls.
Make the mango‑habanero sauce: reserve 1/3 cup of the diced mango and 2 tablespoons of the diced red onion for garnish. In a blender or food processor, combine the remaining diced mango, minced habanero, honey, lime juice, rice vinegar, 1 tablespoon of olive oil and 1/4 teaspoon salt. Pulse until smooth. Transfer the puree to a bowl and stir in the reserved mango and onion for texture.
Marinate the chicken quickly: place the chicken thighs in a bowl or zip-top bag. Add the remaining 1 tablespoon olive oil, smoked paprika, cumin, 1 teaspoon kosher salt and the minced garlic; toss to coat. Let sit at room temperature for 10–15 minutes while the rice cooks and the sauce rests.
Sear the chicken: heat a large nonstick or cast-iron skillet over medium-high heat until hot. Add the chicken thighs (shake off excess marinade) and sear without moving for 4–5 minutes until well browned. Flip and cook 3–4 minutes on the second side.
Glaze and finish: reduce heat to medium-low, pour the mango‑habanero sauce over the chicken and simmer gently, spooning the sauce over the pieces, 3–5 minutes until the chicken reaches 165°F and the sauce thickens slightly into a sticky glaze. If the sauce reduces too quickly, add 1–2 tablespoons of water.
Rest and slice: transfer the glazed chicken to a cutting board and let rest 5 minutes. Slice the thighs into strips or bite-size pieces.
Assemble the bowls: divide the hot rice among 4 bowls, top with sliced chicken and any pan sauce. Add avocado slices, a sprinkle of chopped cilantro, the reserved mango-onion mixture, and a lime wedge. Serve immediately so the contrast between the warm glaze and cool avocado is preserved.
